Healthy Chunky Monkey Smoothie

Happy Monday everyone!

I hope you all had a great weekend! We had a lot of fun taking an adventure to town and hanging out as a little family, including “partying” all night long because someone thinks mom doesn’t need sleep…thanks Cooper! Who is six months old today!! I can hardly believe it. It seems so surreal that six months and one day ago our little man wasn’t here yet.

I can barely remember when he wasn’t part of our family! (you know, those two long weeks in our marriage that I wasn’t pregnant…) He’s such a fun, happy boy and we love him so much! (he’s currently sitting next to me watching Moana, he LOVES this movie! Probably because when we were cooped up in the house during the winter I was dreaming of sunny beaches and watched this movie a lot!)

Anyway back to this smoothie. So last week as we’re grocery shopping Jon tells me that his goal is to eat two cups of leafy greens everyday. Which is awesome! I just have to brag about my amazing husband for a second. He’s always so supportive of all of my crazy ideas, and he’s always trying to think of ways we can be healthier and I love it because it helps me too. So when Jon tells me this goal, I’m all sorts of excited because that means lots of salads and I love salads! Well salads aren’t as filling for hard working cowboys which means I’ve been making this smoothie a lot! It has become a daily staple in our lives because 1. it’s a great way to sneak those greens in without sacrificing flavor 2. it helps curve my chocolate cravings! I have a huge sweet tooth and require dark chocolate on the daily to function. Having one of these smoothies helps me get my chocolate fix and my greens at the same time! Love.

 

Here’s what you’ll need:

(this makes two servings!)

2 cups almond milk (or coconut or regular ol cows milk!)

2 frozen bananas*

2 1/2 Tbs. coco powder

3 Tbs. peanut butter

1 tsp. maple syrup (or a pinch of stevia is what I use)

pinch of salt

As many leafy greens as you want!

**I take ripe bananas, break them in half, and freeze them for my smoothies! It makes them thick and so creamy!**

Directions:

  • Pour milk in your blender and add your spinach and blend it up! (this makes for a smoother consistency…no on likes spinach chunks in a smoothie)
  • Add everything else and blend until smooooooth and creamy!

And enjoy! Super easy and delicious! This smoothie is great any time of the day! I just had one for lunch, or if I’m craving a dessert after dinner, nine times outta ten I make this smoothie!
